Description

Delicious bite-sized cheesecakes packed with protein using Greek yogurt and low-fat cream cheese, perfect for satisfying cravings without the guilt.


Ingredients

  • 1 cup Greek yogurt
  • 8 oz low-fat cream cheese
  • 1/4 cup honey
  • 1/2 cup granulated sugar substitute
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup fruit compote (optional)
  • Fresh berries for topping (optional)


Instructions

  1. Preheat your oven to 325°F (160°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, beat together the Greek yogurt and cream cheese until smooth.
  3. Add honey, sugar substitute, eggs, and vanilla extract, and mix until well combined.
  4. Pour the mixture into the prepared muffin tin, filling each liner about 3/4 full.
  5. Bake for 20-25 minutes, until the edges are set but the center still jiggles.
  6. Allow to cool completely before removing from the tin.
  7. Top with fruit compote or fresh berries before serving.

Notes

For best results, let ingredients sit at room temperature before mixing to avoid lumps. Use non-fat or low-fat yogurt for a higher protein content.
