Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (optional)
  • 1 egg
  • 1 cup crushed pork rinds or almond flour
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon Italian seasoning


Instructions

  1. Preheat air fryer to 370°F for 5 minutes.
  2. Pat the chicken breasts dry and coat each side with olive oil.
  3. Sprinkle salt, pepper, garlic powder, and paprika over the chicken.
  4. In a bowl, whisk the egg. In another bowl, mix crushed pork rinds or almond flour, parmesan, and Italian seasoning.
  5. Dip each chicken breast in the egg, then coat with the crumb mixture, pressing well to adhere.
  6. Place the chicken in the air fryer basket, ensuring there’s space between pieces.
  7. Cook for 18-20 minutes, flipping halfway through, until chicken reaches an internal temperature of 165°F.
  8. Let the chicken rest for 5 minutes before slicing.
