Description
Delicious and easy sheet pan chicken fajitas that require minimal cleanup and deliver maximum flavor. Perfect for busy weeknight dinners.
Ingredients
- 1 lb chicken breast or thighs, cut into strips
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon smoked paprika
- Tortillas, for serving
- Sour cream, avocado, salsa, and cheese, for toppings
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine chicken, bell peppers, onion, olive oil, and fajita seasoning. Toss to coat.
- Spread the mixture on a rimmed baking sheet.
- Roast in the preheated oven for 20-25 minutes, flipping halfway through.
- Warm tortillas in foil during the last few minutes of cooking.
- Serve fajitas in tortillas with your choice of toppings.
Notes
For make-ahead prep, marinate chicken and veggies the night before. Leftovers can be used for salads, burritos, or breakfast scrambles.
